How it's calculated
For each dish we take its real recipe and compare it with the traditional version of the same dish (hen's egg, butter, cow's cheese, chicken, pork, beef). Each ingredient gets its emissions, water and land footprint from the reference studies, and the difference between the two recipes is what appears on your account. It is an estimate per serving, not a measurement in our kitchen. What it compares are the ingredients of one version and the other. Everything else, cooking it, plating it and serving it, is the same either way, so it does not change the difference.
On water: the figure includes both irrigation water and the rain that falls on pasture and feed crops, which is most of the total in the case of meat. It is measured the same way on both sides of the comparison. It is not tap water: it is all the water needed to produce the ingredient.
